3 eggs 1/2 cup flour 1/2 cup milk 4 tablespoons butter 1 tablespoon sugar pinch nutmeg syrup, powdered sugar, or whatever topping you want Preheat oven to 425. Mix eggs, flour, milk, sugar and nutmeg until smooth. Put butter in iron skillet and put in oven. Watch for the butter to melt. As soon as it's melted, pour batter in skillet and bake for about 15-20 minutes until the pancake is fluffy and golden. Turn oven down to 300 and bake for about 5 minutes longer. Remove from oven, cut into slices and serve with your favorite topping. You'll need to serve this pancake as quickly as possible, as it loses some of its glory after it cools off.
