Zucchini Bread

Dry Ingredients
3 Cups sifted flour
2 Cups sugar
1 Teaspoon salt
1 Teaspoon baking soda
1/2 Teaspoon baking powder
1 Teaspoon cinnamon

Wet Ingredients
2 Cups grated zucchini
3 Eggs beaten
3/4 Cup ground pecans
1/2 Cup raisins
1/2 Pint sour cream
1 Teaspoon vanilla
1 Cup oil


Preheat oven to 375 degrees.

Mix dry ingredients.

Add zucchini, eggs, vanilla and oil and beat until smooth. Add sour cream, nuts and raisins.

Bake in greased & floured loaf pan for 1 hour, or mini loaf pans for 35 minutes or small loaf pans for 45 minutes.
Cool on a rack. Serve with a sprinkling of powdered sugar or a dollop of whipped cream. Enjoy!!!

Me and zucchini don't have the best of relations. My first job growing up, around 14 or 15, was working at a local farmers market where they grew their own zucchini and my job was to pick the zucchini from the plant. The zucchini plants are covered in tiny thorn like spikes, nothing enough to really cut you but enough to annoy the crap out of you. Kind of like tiny cat scratches. Picking in the middle of summer.

I should get my revenge by making some of this bread, it sure looks good!
