The Chili Thread.

Post your Chili recipes.

Mine.

2 lbs ground beef, browned.
2 cans pinto beans
2 packs chili seasoning
6 jalapeno's, sliced
2 table spoons of crushed red pepper
5 cloves of garlic, diced
2 teaspoons of Tiger Sauce
1 teaspoon of smoke

Cooked it for about 3 hours.

I never make it the same way twice. It's more like cleaning out the fridge for me.
Usually its something like:
leftover chicken - shreaded
leftover bit of roast - diced
pound of saussage - precooked
any bean or tomato dish left in the fridge
as needed for volume - can of crushed or diced tomatoes, can of beans (black, white, pinto, etc)
couple of packs of chili seasoning
diced onion
anything else that needs to come out of the fridge and seems like it would add a bit of 'sumpin'
(bit of tex-mex hamburger helper - that spicy rice dish from Tuesday - who saved that little bit of tomato soup???)
Toss it all in the crock pot and go to work.
30 mins before dinner, mix up a batch of cornbread and enjoy!

Deer Camp Chili

4 pounds venison, diced
2 pounds pork, diced
1/4 cup vegetable oil
12 garlic cloves, crushed
2 cups onions, diced
3/4 cup green chili peppers, diced
8 tomatoes, seeded chopped
1 teaspoon ground cumin
1 cup red bell pepper, diced
1 cup green bell pepper, diced
1/2 teaspoon paprika
2 tablespoons cayenne pepper
2 tablespoons ground pepper
2 tablespoons salt
2 tablespoons chili powder
1 cup masa
8 cups beef broth
2 (15-ounce) cans pinto beans, drained & rinsed
2 tablespoons cilantro, chopped


Heat oil in a heavy dutch oven over medium heat. Add diced venison, diced pork, crushed garlic cloves and diced onion. Cook for 15 minutes. Meanwhile, puree green chili peppers. Add to the pot with chopped tomatoes, cumin, diced red bell pepper, diced green bell pepper, paprika, cayenne pepper, pepper, salt, and chili powder; cook for 5 minutes more. Add the masa and beef broth. Bring to a boil over medium-high heat, then reduce the heat and simmer for 45 minutes. Add pinto beans and chopped cilantro; simmer for 5 minutes & serve. Enjoy!!!

I LOVE chili and chili recipes, here's how I make mine it's pretty simple but does the job.
  • 2 lb ground beef
  • 2 cans (15.5oz each) Brooks Chili Beans (Mild / Hot)
  • 2 cans (10oz each) Ro Tel diced tomatoes and green chilies
  • 1 Chili-O seasoning mix packet
  • 1 large onion
  • 2 cans (use empty Brooks can) of water
  • 1 or 2 serrano pepper, whole.
Makes for some pretty good chili and a good base to work from. I'll also add left over steak bits, salt and pepper to taste. Serve in bowl with ample peanut butter sandwiches for dipping. :D

Truth be told, I'm making this exact recipe now for the football games!
