Sour Cream Banana Nut Bread

1 cup sugar
1 Stick of butter
2 eggs
1 cup mashed ripe bananas (about 3 ripe bananas)
1/2 cup sour cream
1 teaspoon vanilla
1 1/2 cup flour
1 tsp. baking soda
1/2 teaspoon salt
1/2 cup pecans, coarsely chopped

Heat oven to 350 degrees.

Grease & flour a loaf pan.

In a large bowl, beat together sugar & butter. Then add the eggs, bananas, sour cream & vanilla, blending well.

Mix the flour, baking soda & salt together. Then slowly stir the dry ingredients into the wet ingredients.

Pour the resulting mixture into your prepared load pan.

Bake at 350 degrees for 50-60 minutes or until toothpick inserted in center comes clean.

When it is done, allow it to cool for 5 minutes, then remove it from the pan to cool completely.

Wrap tightly & store in refrigerator.
