pickled beets

I did another cooking marathon last week which included 8.5 pints of pickled canned beets. I used the cinnamon and clove spiced version.


You can clearly see how much lime is in our water here. With the earlier salsa I wiped the jars down with vinegar on a rag but not yet with these.

I only processed 7 pints and put the other 1.5 in the fridge as it just seemed pointless to process one jar for 30 minutes.

Now I'm out of pint jars...
