pickled beets question

I used the USDA recipe for pickled beets - this version seasoned with cloves and cinnamon - back in November. When I grabbed a jar last week I noticed that some of the sliced beets were not fully covered with liquid but had edges up into the head space. I know there was liquid over the beets when they went into the water bath. Thinking about it I probably over packed the jars. Some of it is probably shifting of the contents as I moved it to the shelf in the basement.

I opened a jar and it looked and smelled fine but I still was wary so the whole pint went down the garbage disposal. There's five or six more jars down there.

Am I being overly cautious?
Am I taking my life (and my 3 year olds life) in my hands by consuming these?

As long as the the lid is still sucked down from the vacuum, they should be fine. We have experienced the same thing here & have never had a problem.
