Mrs. Ranch's Potato Salad

2 Pounds red potatoes (5 to 6 medium-sized), cut into 3/4 to 1" chunks
1 Cup mayonnaise
2 Tbs. vinegar
1 Tbs. mustard
1 1/2 Tsp. salt (optional)
1 Tsp. sugar
1/2 Tsp. ground black pepper
1 Cup sliced celery
1/2 Cup chopped green onion
3 Hard-boiled eggs, chopped

Cover potatoes with water in 4-quart pot & bring to a boil over medium-high heat. Reduce heat to low & simmer until potatoes are tender (about 10 minutes). Drain & allow to cool.

Combine mayonnaise, vinegar, mustard, salt, sugar & pepper in large bowl. Add potatoes, celery, onion and eggs & toss gently.

Serve chilled. Enjoy!!!

Looks a lot like mine though I never thought of adding sugar.

My wife started adding chopped pickles a few years ago and they're a great addition to a mustard potato salad.
