Breakfast Burrito for two weeks

I typically make myself eggs and toast in the morning for breakfast before heading off to work. However, sometimes time isn't always on my side and I wanted to make something that would be good, filling and quick - other than cold cereal.

Last night I made myself about 15 breakfast burrito's that I've since wrapped in aluminum foil. Now all I need to go it unwrap the foil, cover them with a paper towel and microwave for about two minutes and I have a nice breakfast burrito.
  • 18 eggs
  • 2 bags of wheat tortillas
  • 1 bag shredded cheddar cheese
  • 2 16oz turkey breakfast sausage
  • 2 cans of black beans, drain and rinsed
  • 2 green bell peppers
  • 1 white onion
  • 1 garlic clove minced
I'll post a picture soon, but man are they good! :)

I've done this several times now. Two things I've started doing:

Add diced roasted potatoes

Freeze individual portions of filling without the tortilla. You'll save tedious assembly and wrapping. Gives you the option of wrapping in a tortilla later or eating out of a bowl.

That's actually a good idea. In fact I had some filling left over and that's exactly what I ate this morning out of a bowl.
