Apple Cinnamon Steel Cut Oats

This is another easy hot breakfast. This moves all the work to the night before and will feed four to six.

Sauteed apples with cinnamon:
  • ~2 apples peeled and diced
  • 2 - 3 T butter
  • 1 t cinnamon

Sautee the apples in butter over medium high heat - I use a cast iron skillet

Oatmeal
  • 1 c steel cut oats
  • 4 c water
  • ~2 T apple cider vinegar

Bring water and apple cider vinegar to a boil then add steel cut oats. I use a 2 qt enameled dutch oven with a lid. Continue over heat at a boil for 1 minute. Remove from heat and add sauteed apples.

Allow to cool some and place in the refrigerator overnight.

Heat in the morning.

The vinegar is added to help prevent a green foam from developing. Something in oats will react with bare metal and alkaline compounds to create a green foam. While it's not attractive it won't hurt you. This is the reason behind almost all steel cut oat recipes calling for either enameled cast iron or glass / pottery like a slow cooker crock.
